Keto Beef Stroganoff

Growing up, one of my absolute favorite meals with beef stroganoff. Unfortunately, the recipe that we used had a can of cream of chicken soup and a couple tablespoons of flour. I’ve tried over the last couple years to make something similar but never came super close. I figured I would just take the EXACT recipe and only replace the non keto items so I can get as close as possible. Since I skipped the cream of chicken, I added extra boullion to the chicken broth for extra chicken flavor. It may be a tad bit thinner than my family recipe but it tastes about 95% the same and that’s a statistic I am hyped about. Here’s the recipe!⁣

Ingredients:⁣
1 pound of ground beef⁣
1 tablespoon butter⁣
Half a cup frozen chopped onions⁣
1 cup sliced mushrooms⁣
Salt and pepper and garlic power/salt to taste⁣
1/4 tsp xantham gum⁣
1/2 cup chicken broth with 1/2 chicken bouillon cube dissolved⁣
1 cup sour cream ⁣

Directions:⁣
Sauté the onion and mushrooms in butter until they soften. Add ground beef. Brown and drain. Season mixture with salt, pepper and garlic powder/ salt. Sprinkle the xantham gum over the top. Add chicken broth and sour cream. Stir and simmer for 5-10 minutes until thick! Serve over veggies! I chose caulirice.
