Low Carb/Keto spinach artichoke casserole

Growing up I had a favorite meal that my mom would make for me! It was an artichoke casserole and it was delicious. Unfortunately it had a good amount of flour which made it pretty high in carbs! So I went to work recreating a keto version and I finally did it!

Ingredients:

1 lb shredded chicken (i used rotisserie chicken)

12 oz frozen spinach thawed and drained

1 can artichoke hearts quartered

1 block of cream cheese

1/2 cup mayo

1/2 teaspoon rosemary

1/2 cup heavy whipping cream

1 cup shredded parmesan (split into half cups)

1 cup mozzarella (split into half cups) 

Directions:

-Preheat oven to 375 

-spread out chicken in 9x13 baking dish

-combine all remaining ingredients in a mixing bowl. (Leave out half cup of mozzarella and parmesan) 

-top cheese mixture on chicken 

-cook for 25 minutes 

-top with remaining cheese and broil for 3-4 minutes
